Easy Camping Breakfast ideas
1) Overnight Oats
This overnight oats recipe is perfect for a quick camping breakfast before a long day on the trails.
It is packed with healthy fats and complex carbohydrates for long-lasting energy.
Make sure that you use rolled oats rather than steel-cut or quick oats so the consistency comes out right.
I love to make my overnight oats in Stanley’s All-In-One Food Jar. It has a separate compartment that I put the fruit and nuts in to keep them fresh, and a spork that attaches to the side.
[Serves 2]
Ingredients:
1 cup old-fashioned rolled oats
1 cup almond milk (or your milk of choice)
1/2 cup mixed nuts
1 banana
1/2 teaspoon cinnamon
1 tablespoon maple syrup or honey
Directions:
Mix oats, milk, and cinnamon in your Food Jar
Let the mixture sit in the cooler or fridge overnight (at least 3 hours or up to 3 days)
Add banana, mixed nuts, and sweetener (optional) and serve
2) Chilaquiles with Chorizo
[Serves 2]
Ingredients:
4 oz Tortilla Chips
6 oz Chorizo (or other source of fat for the pan)
4 Eggs
4 oz Salsa
2 tablespoons Greek Yogurt
Directions:
Add chorizo to pan over medium heat and cook for 5 minutes
Once chorizo is cooked, add chips and gently stir them in
Cook chips in the chorizo for 2 minutes to get them nice and crispy
Move chips to one side of the pan to make room for eggs
Crack eggs and scramble them separate from chips until they start to solidify
As eggs solidify, gently stir together with chips (the goal is to have the scrambled eggs stick to the chips)
Once the eggs are fully cooked, remove from heat and mix in salsa
Top with Greek yogurt and enjoy
3) Breakfast Burritos To-go
Ingredients:
4 Medium Tortillas (or 2 Large Tortillas)
4 Strips of Thick Sliced Bacon
5 oz Tater Tots or Hash Browns
4 tablespoons Salsa
4 oz Shredded Cheese
1 Medium Avocado (optional)
4 12'“ x 12” Sheets of Aluminum Foil
Directions:
1-3 days ahead of time:
Fry bacon to desired level of crispiness
Scramble eggs and cook in the bacon grease left in the pan
Bake / fry tater tots until they are crispy
Warm tortillas in microwave for 10 seconds so they are flexible
Layer cheese, eggs, bacon, and tater tots in center of tortilla
Fold in sides of tortilla and roll up into a burrito
Wrap breakfast burritos in the aluminum foil sheets
Store in fridge or cooler for up to three days
Day of:
Place wrapped burritos in / over fire
Remove breakfast burritos from the fire after 5-10 minutes depending on the temperature of the fire
Serve with salsa and avocado (optional)
4) Bacon Avocado Toast
[Serves 2]
Ingredients:
4 slices of Sourdough Bread (or other bread of your choosing)
2 Medium Avocados (soft to the touch)
4 slices of Thick Cut Bacon
1 tablespoon Trader Joe's Everything But the Bagel Seasoning
Directions:
Cook the bacon to desired crispiness and set aside. Pour bacon grease out but don’t clean the pan.
Toast bread in the bacon pan to soak up the flavors
Remove the skin and pits from the avocados and smear on the bread. If your avocados are not quite soft enough to spread, warm them up over the fire for 30 seconds.

Add bacon to the top (or eat it separately if it didn’t last this far)
