Easy Camping Breakfast ideas

1) Overnight Oats

This overnight oats recipe is perfect for a quick camping breakfast before a long day on the trails.

It is packed with healthy fats and complex carbohydrates for long-lasting energy.

Make sure that you use rolled oats rather than steel-cut or quick oats so the consistency comes out right.

I love to make my overnight oats in Stanley’s All-In-One Food Jar. It has a separate compartment that I put the fruit and nuts in to keep them fresh, and a spork that attaches to the side.

[Serves 2]

Ingredients:

  • 1 cup old-fashioned rolled oats

  • 1 cup almond milk (or your milk of choice)

  • 1/2 cup mixed nuts

  • 1 banana

  • 1/2 teaspoon cinnamon

  • 1 tablespoon maple syrup or honey

Directions:

  1. Mix oats, milk, and cinnamon in your Food Jar

  2. Let the mixture sit in the cooler or fridge overnight (at least 3 hours or up to 3 days)

  3. Add banana, mixed nuts, and sweetener (optional) and serve

2) Chilaquiles with Chorizo

Chilaquiles are great for camping because you can make everything in one pan and they are ready in under 10 minutes.

[Serves 2]

Ingredients:

  • 4 oz Tortilla Chips

  • 6 oz Chorizo (or other source of fat for the pan)

  • 4 Eggs

  • 4 oz Salsa

  • 2 tablespoons Greek Yogurt

Directions:

  1. Add chorizo to pan over medium heat and cook for 5 minutes

  2. Once chorizo is cooked, add chips and gently stir them in

  3. Cook chips in the chorizo for 2 minutes to get them nice and crispy

  4. Move chips to one side of the pan to make room for eggs

  5. Crack eggs and scramble them separate from chips until they start to solidify

  6. As eggs solidify, gently stir together with chips (the goal is to have the scrambled eggs stick to the chips)

  7. Once the eggs are fully cooked, remove from heat and mix in salsa

  8. Top with Greek yogurt and enjoy

3) Breakfast Burritos To-go

4) Bacon Avocado Toast

Our favorite way to make avocado toast requires a Trader Joe’s Everything But the Bagel Seasoning.

We also like to put bacon on our avocado toast when we go camping because who doesn’t love the smell of bacon cooking over a campfire in the morning?

[Serves 2]

Ingredients:

Directions:

  1. Cook the bacon to desired crispiness and set aside. Pour bacon grease out but don’t clean the pan.

  2. Toast bread in the bacon pan to soak up the flavors

  3. Remove the skin and pits from the avocados and smear on the bread. If your avocados are not quite soft enough to spread, warm them up over the fire for 30 seconds.

  4. Sprinkle Trader Joe's Everything But the Bagel Seasoning onto the avocado

  5. Add bacon to the top (or eat it separately if it didn’t last this far)

5) Fruit and Yogurt Parfait

They also make a great healthy dessert or a mid-afternoon snack.
